These simple, sweet, and salty honey-roasted nuts are a new tradition this year.
Born of a desire to have something special to snack on whilst we languish in the living room (read: fold laundry and panic about our kitchen demolition), they surprised us with their simplicity and tastiness.
Delicious any time of year, honey-roasted nuts come to a special pinnacle at the holidays.
Easy to make with basic ingredients, this recipe is sure to delight family, guests, and hostesses alike.
Honey-Roasted Holiday Nuts
Sweet, salty, and spiced roasted nuts to enjoy as snacks or share as gifts for the holidays. Featuring vanilla, cinnamon, and nutmeg spices.
Ingredients
- 2 lbs whole shelled nuts (like almonds, walnuts, chestnuts, peanuts, hazelnuts, Brazil nuts, pecans, or a combination thereof--we used almonds and walnuts)
- 4T organic butter
- 2T organic raw honey
- 4 vanilla beans
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 2-3 tsp Kosher salt
- 2 T organic Turbinado sugar
Directions
- Step 1 Preheat oven to 350 degrees Fahrenheit. Prepare two cookie sheets or large roasting pans with foil.
- Step 2 If using larger nuts (like Brazil nuts), cut in half to create more uniform size between all nuts.
- Step 3 In a small, thick-bottomed saucepan, melt butter until melted and clear but not bubbling. Remove from heat and add honey stirring well to combine.
- Step 4 Split and scrape center of vanilla beans. Add scraped vanilla, cinnamon, and nutmeg to the butter and honey mixture. Whisk briskly to combine.
- Step 5 Pour honey, butter, and spice mixture into a large bowl. Add nuts and toss to mix well.
- Step 6 Divide between sheets/pans. Bake for 20-30 minutes stirring/tossing at 10-minute intervals to ensure even roasting.
- Step 7 Remove when nuts begin to brown, but before they all turn dark.
- Step 8 Sprinkle EACH sheet/pan with 1tsp Kosher salt and 1T Turbinado sugar. Stir/toss to combine.
- Step 9 Continue to cool in pan until hardened and completely cool. Break apart large chunks apart to separate clusters into bite-sized pieces.
- Step 10 Store in airtight jars.
